Cannelloni

All Cannelloni should be baked in an oven with sauce on the bottom of the baking dish and covered with foil. Optimum results are achieved when the Cannelloni are thawed overnight, and baked fresh for 20 - 25 minutes at 400°F or 200°C.

     [Ingredients]
A wonderful blend of roasted veal, roasted chicken, and a hint of sautéed spinach fill thin tubes of fresh pasta. Very subtle, very divine.

     [Ingredients]

Gnocchi

Preferred cooking time is 3 - 4 minutes. Drop frozen gnocchi in boiling water, stir gently and cover. Continue stirring, as water comes to a boil, remove with slotted spoon and add to sauce.

Gnocchi with Real Potato
     [Ingredients]
No potato flakes, no potato powder just REAL POTATOES. Just like nonna used to make with potatoes, flour, eggs, and a pinch of salt. The best gnocchi you will ever eat.

Lasagna

For prepared lasagna, remove poly bag (leave cling film and foil lid) and bake at 400°F or 200°C for 90 minutes (from frozen) or 45 minutes (from fresh).

Lasagna Sheets
     [Ingredients]
26 ultra thin, frozen sheets of pasta, layered with parchment paper and cut to fit a hotel pan. Thaw overnight in a refrigerator; peel sheets from parchment paper and you are ready to build the lasagna. Sheets may be blanched for 10 - 20 seconds or they may be used from fresh state.

Italian Sausage Lasagna

Five thin layers of pasta smothered with Italian sausage, flavored bolognese, and mozzarella cheese. Mmmmm.

Ravioli

Preferred cooking time (from frozen) is 6 - 8 minutes at a slow rolling boil. All ravioli are pouches and may open in water if boiled too vigorously. Strain and top with your favourite sauce.
